Recipe

  1. Create the sourdough base by taking a portion (50g) of the mother starter and mixing onto a glass container. Add 100g warm water, 100g bread flour, to the starter. Mix well and let rest for 4-6 hours at room temperature until bubbly and active.

  2. After resting, in a large bowl, combine 200g of active starter with 400g warm water, and 600g flour. Mix well enough to roughly combine. Rest the dough for 15 minutes to allow the autolyse process to begin.

  3. After the autolyse, add 12g salt and a splash of water. Mix thoroughly to not feel the salt in the dough. After kneading, rest for 4 hours.

  4. Knead again, add flour and fold into a circle shape. Rest for 30 minutes.

  5. Fold into a circle shape and get ready to prep for final 30 min rest.

  6. Preheat oven with a dutch oven inside for 475 degrees until it dings.

  7. Drop temp to 430

  8. Place dough in dutch oven, spray with water and score the bread. With lid on, place the dutch oven in the… err… oven

  9. Bake for 25 minutes.

  10. After the timer goes off, remove lid and bake for another 25 minutes or until the bread starts to brown well enough.

  11. Remove bread from the oven and let it cool on a wire rack for at least 30 minutes before slicing.
