Papelón con Limón is a traditional Venezuelan drink made with papelón (panela) and fresh lime juice. It’s a refreshing beverage, especially popular in hot weather. The recipe is simple and can be adjusted to taste.

  1. Break the papelón into smaller pieces or grate it. Place it in a large pitcher or pot. Add about 250–500ml of hot or warm water and stir until the papelón is completely dissolved. This may take 10–30 minutes of occasional stirring, or you can let it sit in cold water for 30 minutes to overnight.

  2. Once the papelón is fully dissolved, add the remaining cold water and the freshly squeezed lime juice.

  3. Stir everything together thoroughly. Taste and adjust for sweetness or tartness — add more dissolved papelón if you prefer it sweeter, or more lime juice if you prefer it tangier.

  4. Refrigerate until thoroughly chilled. Serve over plenty of ice.
