Recipe
Section titled “Recipe”-
Place your heatproof glass on the digital scale and zero it out. Measure 30–40g of sweetened condensed milk directly into the bottom of the glass.

Place the phin filter plate and brew chamber on top of the glass.

Place the phin’s brew chamber on your digital scale and zero it out. Add 18–22g of dark roast ground coffee to the brew chamber. Gently shake to even out the grounds.

Place the gravity press (the inner filter) on top of the coffee grounds. You can gently press it down to compact the grounds, but don’t overtighten it.

Bring your water to a boil, then let it cool for about 30 seconds to reach the ideal brewing temperature — around 194–203°F (90–95°C).

Pour a small amount of hot water (about 20–30ml) over the press to just cover the grounds. Let it sit for about 45 seconds to allow the coffee to bloom and expand.

After blooming, slowly pour the remaining hot water (approximately 80–90ml, or enough to fill the phin) over the press.

Place the lid on the phin and let the coffee slowly drip into the glass with the condensed milk. This typically takes 3–7 minutes. If it drips too fast, your grind might be too coarse or the press not tight enough. If it’s too slow, the grind might be too fine or the press too tight.

Once all the coffee has dripped through, carefully remove the phin filter (you can place the lid upside down to catch any drips). Stir the hot coffee and condensed milk together thoroughly until fully combined.

Fill a separate tall glass with ice cubes. Pour the hot coffee and condensed milk mixture over the ice, stir briskly to chill, and enjoy.
